My graphic design students use a wiki to do what you’re attempting. I teach at a technical career center and every student in our school is required to create a career portfolio. We made a sample e-portfolio for our students to base theirs on, it can be found here:

The one a lot of individuals are looking at is Skillsbook – as it’s a self-registering site, which allows you to develop your e-portfolio, and lets you pubically publish the parts you choose.

If I was to make a portfolio of my experience at University I would try to use as many tools as I could to showcase my talents. Each part of the portfolio using a different tool. Hmm Then a wiki would be great as a host site and your work can be done using all the different tools that you have used.
